Does anyone have a genuine recipe for the Espinaca con queso dip sold at Tortilla Flat, Merrimack NH? It is similar to a cheese fondue style dish, but does not tend to set back into a lump of cheese when cold, and can be reheated to restore its dipping qualities. There is no artichoke, I have not detected any significant garlic and the cheese is probably a mix of Monterey Jack and Cheddar, certainly no 'stringiness' associated with mozzarella. The spiciness is almost certainly jalapeno, and varies by visit, but never *too* spicy for my wife who is a spicy-wuss!! My concern is maintaining the texture of the dip after cooling and reheating. I have been making cheese fondues for many years so I'm guessing it's the fluid base that leads to the correct texture but I don't want to waste a lot of ingredients experimenting.

Help making fluffy tortillas? My grandmother made the best tortillas. They came out fluffy and white with big brown spots. When I try to make them they come out flat with no spots. I mix self rising flour, water, and Crisco. I roll out the tortillas and put them on a skillit at about medium temperature. Any tips on what I should be doing? Will it help if the skillit is hotter or lower? Does it matter the length of time I need the dough or let it set? Thanks for any advice.

Waterfront restaurant suggestion for wedding in Orange County, CA? I need some suggestions for restaurants in Orange County (could be Long Beach too) to have my ceremony & reception but it can't be off the charts expensive. I'm trying to keep it around $4000 - $5000 for 50 guests. It is pretty important for it to be ocean front or lake view. Definitely want water. Recipe for Czech buckwheat pancakes? I was just in the Czech Republic at a Renaissance festival. They made "Pohankove Placky" at one booth--a buckwheat dough rolled out flat then cut into circles like tortillas and cooked on a grill, then topped with garlic spread and leeks. They were fabulous. How can I shape my dough to be perfectly round using a rolling pin? I'm trying to make perfectly (or close to perfect ;) ) round flat-breads, pastries and the like (i.e. pizzas, rotis, tortillas etc.). I've tried to shape the dough to be round by rolling over it gently and tried every way that I could think of...maybe I'm doing it wrong because it always comes out weird. I no longer want weird shaped flat breads! : ) I want perfection! : ) Some people can do it so effortlessly! I too want that gift! : ) I know I can easily buy a machine to get nice flat round dough, but I want to know any tips or tricks that can help me lead to perfection when it comes to rounding out the dough with a rolling pin. Also, if there are how-to websites or videos online, please let me know. I want to eat healthy but i have a problem...? I'm 15, i drink skim milk, i eat whole grain bread (if i eat bread), i use tortilla and flat bread usually. I try to excersize and stuff too (i might get 4-6 walks a week?) so my moms like "you're FAT lose fifty ounds... EAT A SALAD!" but i dont like salad because the feeling of lettuce/spinach in my mouth is like eating a fallen leaf off the ground... makes me gag... how can i stop the gagging and get to more swallowing... without pukage? my walks are more like runs half the way, i take my dog to the tim hortons to get my parenst cofee, or to get the mail, thats... i dunno maybe a mile or so? my problem isn't the taste of the lettuce its the feel of it... like ill eat spinach tortilla...

Can anyone tell me how I can make tortillas on a glass top electric stove& actually look ant taste good? I got a new stove about 6 months ago and have not been able to put a comal on it to cook some good old tortillias. Mgf says iron will stain the top of stove. I bought a cheap electric griddle and it sucked. The torts were not the right color or taste, they weren't even plyable for a burrito. I purchased a aluminum comal and it could not tolerate the high heat and it is not flat anymore so the torts do not cook evenly' Someone out there has had to have invented somethin that I am not aware of. Does anyone know how to make homemade enchilada sauce using the dry red chiles you find in supermarkets? I had a friend whose family would frequently make "flat" enchiladas and homemade sauce. They were so good. Before then, I was only used to rolled enchiladas. This sauce was bright red and liquidy-smooth. What they do is place a flat soft corn tortilla, then a layer of refried beans and pour sauce, then another layer and so on and so on....like a stack of pancakes. I think they were from Chihuahua, Mexico. Does anyone know how to make that? Help me make my own. Thank you so much!
