Does anyone have a good recipe for tortilla soup?

  1. I got this recipe from my neighbor:



    1 lb. ground beef w/taco seasoning

    2 14 1/2oz. cans chicken broth

    1 15oz. can ranch style beans

    grated cheese

    sour cream

    bag of tortilla chips



    Prepare taco meat according to directions on the seasoning packet. Heat chicken broth and beans. Add taco meat. Crumple tortilla chips in a bowl. Add grated cheese. Fill bowl with soup mixture. Serve with dollop of sour cream.



    Enjoy! I like this recipe because each person can add as much cheese, chips, and sour cream as they wish!

    1 cup of water

    1 can of beef broth

    1 can of chicken broth

    1 large can of tomato sauce

    1 med can of chopped tomato

    1 small can of tomato paste, use only half

    1 small can of jalapenos

    1 small yellow onion chopped

    3 cloves of garlic

    1 teaspoon ground cumin

    3 tablespoons of oil

    1 pk of cheddar cheese shredded

    1 pk of corn tortillas

    1 avacado

    1 buch of cilantro



    add oil to large dutch oven or stock pot and cook onions over med heat until clear, Add crushed garlic. Cook 5 min add water, broths, tomato sauce, chopped tomatos, and half of the paste. remove jalapenos from can and add juice to soup(this is according to taste, will add heat, I usualy chop about 1\3 of the jalapenos and add them too. the heat will gradualy increase, so use sparingly) Add ground cumin. And simmer for 15 - 25 mins. Salt and Pepper to taste.

    slice corn tort into 1\2 inch slices. fry in separate pan with 3 tbl of oil until crisp. remove and drain.

    To serve



    Fill bowl with cheese, avacado and tort chips. fill with Broth( broth can be thickened or thinned by increasing simmering time or by adding more chicken broth or water). Top with Cilantro Bon appeti!



    you can add cooked chicken if you prefer, but not a requirement.
